Ingredients:
- light vegetable oil cooking spray
- 2 Tbsp. butter, melted
- 1/2 cup packed brown sugar
- 3 cups Granny Smith apples, peeled and diced
- 1/2 cup chopped walnuts, toasted
- 2 large eggs
- 1 Tbsp. vegetable oil
- 11/2 cups all-purpose flour
- 1 cup sugar
- 1 tsp. baking powder
- 1 tsp. nutmeg
- 1 tsp. ginger
- 1 tsp. vanilla extract
- 1/4 tsp. salt
Preparation:
- Preheat oven to 375 F. Lightly coat a 9-inch square pan with cooking spray.
- Pour melted butter into pan. Evenly sprinkle the brown sugar over melted butter before sprinkling the apples and walnut over the brown sugar mixture.
- Use a large bowl to whisk together eggs and oil; Use a medium bowl to mix the flour, sugar, powder, nutmeg, ginger, vanilla extract and salt.
- Slowly spread the cake batter over the apple-walnut sugar mixture.
- After spreading the cake batter, bake the apple-walnut batter combination for 45 minutes or until a wooden pick or table fork inserted in the center comes out clean.
- Allow cake to cool for 10 minutes on a wire rack.
- Place a platter or a large plate on the top of the cake.
- Invert cake pan and remove pan. Serve warm or at room temperature.
