A popular dessert for little girls' birthday parties, a Barbie cake can be easily transformed into a stunning bride cake, making it the perfect dessert for a bridal shower. Although it looks impressive, this cake is easy and inexpensive to make, and doesn't require a pricy mould.
Ingredients
1 to 2 cake mixes
2-3 containers of white frosting
Icing Sugar
Food Coloring
Instructions
Preheat your oven to 300' F. Grease and flour a large Pyrex bowl that is the height of the Barbie's waist.
Tip: Instead of a typical Barbie, you can purchase a doll cake topper (which is just the torso).
Prepare cake mix as directed on box. Pour into Pyrex bowl, leaving at least six inches at the top of the bowl.
Place in the oven and bake until a toothpick comes out clean (about 90 minutes).
Cool completely, then turn cake out onto cake plate.
Wrap Barbie's legs in cellophane, then insert into centre of cake. Wrap entire cake in cellophane and place into the freezer until you're ready to frost it. This will keep the cake from crumbling and mixing with the icing, particularly if you made a chocolate cake with white frosting.
Mix each container of frosting with 1/4 cup icing sugar. This will make the frosting stiffer and keep it from melting off the cake. Apply frosting to "wedding dress" using spatula. If the cake begins to crumble and mix with frosting, continue to frost the cake with a thin layer. Then, put it back into the freezer for an hour. Remove and add another layer of icing, which will cover up any imperfections. To create the bodice of the wedding dress, scoop frosting into piping bag and secure a large icing tip to end (for example, the flower tip). Lift the Barbie's arms over her head, then apply frosting in small dabs to the torso of the Barbie. Then, if desired, add detail to the rest of the dress using other tips to create a lace pattern, flowers or leaves. Lower the Barbie's arms.
To personalize your "bride," style the Barbie's hair in a similar fashion to the bride-to-be. For example, if she has short hair, cut the Barbie's hair to match. If she plans to wear a tiara or veil, create one for your cake using ribbon and tulle and a glue gun. If you know the accent color the bride has chosen for her wedding, create a similar shade of icing using food colouring, and use it to add detail to the wedding dress.
Keep the bride in the fridge until you're ready to serve, which will keep the icing intact.
