Devil's Food Cake Recipe with Chocolate Frosting

Recipes for Chocolate Cupcakes Decorated with Cocoa Fudge Icing

Dark chocolate cake layers filled and frosted with chocolate fudge frosting. Decorate this moist Devil's food cake with chocolate curls, chopped walnuts or jimmies.

Old-fashioned devil's food cake is a favorite in many homes and restaurants. Although this classic chocolate cake is traditionally made with dark chocolate frosting, homemade buttercream and white chocolate frosting looks and tastes just as delicious. Serve with a tall glass of cold milk!

Devils Food Cake Recipe

  • 2 cups all-purpose flour
  • 1 cup Dutch cocoa
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) butter, softened
  • 1 cup brown sugar
  • 1 cup white sugar
  • 3 large eggs
  • 1 1/2 teaspoons pure vanilla extract
  • 1 1/2 cups buttermilk

How To Make Devil's Food Cake

  1. Preheat oven to 350 degrees F.
  2. Butter or spray two 9 X 2 - inch round cake pans. Likewise, spray or butter one 9 X 13 - inch baking pan, or prepare 24-30 cupcake tins with paper liners. Flour the cake pans, tapping out excess flour.
  3. Sift flour, cocoa, baking soda and salt together in a large bowl, and set aside.
  4. Using an electric mixer fitted with a paddle attachment, beat butter and sugars together until creamy. Scrape down bowl with a rubber spatula. Add eggs one at a time, then add vanilla, and beat on high until light and fluffy. Scrape bowl again.
  5. Turn mixer to low, and add half the dry ingredients to the liquid ingredients, alternating again, and scraping as needed between additions. Mix until batter is smooth with no lumps.
  6. Pour the batter equally into prepared pans, or divide evenly between the cupcake tins.
  7. Bake round cake layers for 25 - 30 minutes, 9 X 13 - pan for 45 - 60 minutes, or until a pick comes out clean. Bake cupcakes for approximately 20 - 25 minutes or until tops spring back when lightly touched.
  8. Cool 9 X 13 - inch cake and cupcakes completely on wire racks before frosting or freezing. Cool round layers 10 minutes before loosening, then remove them from the pans, and cool completely before decorating.
  9. Frost devil's food cake as desired..

Chocolate Frosting Recipe

  • 1/2 cup (1 stick) butter
  • 1 cup light brown sugar
  • 4 Tablespoons dark Dutch cocoa
  • 4 Tablespoons whole milk or cream
  • 1 teaspoon pure vanilla extract
  • 3 cups powdered sugar

How To Make Chocolate Frosting

  1. Melt the butter in a large saucepan. Add the brown sugar, and bring to a boil.
  2. Turn the heat to low, add cocoa and continue boiling for 2 minutes, stirring constantly.
  3. Add milk very slowly, being careful not to splatter. Bring to a boil, stirring constantly. Remove from burner and cool to lukewarm.
  4. Using an electric mixer at medium speed, slowly add powdered sugar 1 cup at a time, beating after each addition. Continue beating until frosting reaches desired spreading and/or piping consistency. Add a little more milk if the frosting is too thick. Add more powdered sugar if the frosting is too thin.

How To Assemble & Decorate a 9-inch Round Devil's Food Cake

  • Spread a small amount of chocolate frosting on a flat, round, decorative serving plate or cardboard circle. Place one round cake layer on top of the frosting and press down lightly.
  • Spread a thick coat of frosting over this layer and place the second and/or third layer on top, pressing down lightly to seal cakes to frosting.
  • Measure out approximately 1 cup of frosting in a pastry bag fitted with a medium size star tip.
  • Frost the sides and top of the devil's food cake using an off-set spatula, making sure to seal all edges evenly.
  • Holding the pastry bag firmly, pipe 12 evenly spaced rosettes on the top of the cake.
  • Cover completely with plastic wrap, or place in air-tight plastic cake container before refrigerating ant leftovers.

How To Decorate Devil's Food Cupcakes

  • Spread the chocolate frosting over the tops of the cupcakes as desired, maybe with a slight twist of the wrist to form a swirl.
  • Or, place the chocolate frosting in a large pastry bag fitted with a large star or rosette tip.
  • Starting close to the cupcake, firmly squeeze the bag and frosting through the tip in a round circular motion, finally swirling the frosting into a peak.
  • Decorate devil's food cupcakes as desired.

Makes one 9 X 13 - inch cake that serves 16, one thick 9-inch double or triple layer round cake that serves 12, or 24 - 30 cupcakes depending on the size.
