Mixed Berry Coffee Cake

This Dessert Goes Great With Hot or Iced Coffee Drinks

Use fresh raspberries, blackberries, blueberries, or strawberries (or a mixture of berries) to top this delicious coffee cake.

A great cup of coffee deserves a great cake to go with it. Try this yummy coffee cake topped with an assortment of your favorite berries on top. The sour cream gives it a creamy taste that blends nicely with the tangy berries on top. Use fresh berries whenever possible, or substitute frozen, if necessary. Optional toppings are included for impressing the guests at your next coffee klatch. Serve this cake warm with some hot java, of course.

Mixed Berry Coffee Cake

  • 1¼ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • Dash of salt
  • 3 tablespoons cooking oil
  • 1 egg, beaten
  • 2/3 cup sour cream or plain yogurt
  • ½ teaspoon vanilla
  • 1 cup fresh or frozen raspberries, blackberries, blueberries, or strawberries (for topping batter)

Lightly grease and flour a 9-inch round baking pan. In a large bowl stir together ingredients for the cake: the flour, sugar, baking soda, baking powder, cinnamon, and salt. In a small bowl, mix the liquid ingredients for the cake: cooking oil, egg, sour cream, and vanilla. Combine mixtures together stirring with a fork until moistened. Pour the batter into the prepared pan. Arrange berries on top.

Topping Ingredients

  • ¼ teaspoon ground cinnamon
  • 1 tablespoon all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons butter

In a small bowl, combine cinnamon, flour, and brown sugar. Cut in butter until mixture is crumbly. Sprinkle the topping over arranged berries.

Bake in 350-degree oven for 30-35 minutes or until toothpick inserted near center comes out clean. Cool in pan for 15 minutes. Remove coffee cake from pan and serve warm with or without additional toppings below. Preparation time 30 minutes. Serves 8-10.

Optional Toppings to the Topping (Powdered Sugar/Powdered Sugar Glaze)

  • 1 tablespoon butter
  • 2 tablespoons milk
  • 1 cup powdered sugar
  • 1/8 teaspoon salt

If desired, just before serving, sift powdered sugar over the top of the cake slices. A powdered sugar glaze can be drizzled over the cooled cake instead of the sifted powdered sugar. For an easy powdered sugar glaze that yields about ½ cup of smooth white creamy topping, melt 1 tablespoon of butter in a bowl in the microwave, and add 2 tablespoons milk, 1 cup powdered sugar, and 1/8 teaspoon salt. Stir until smooth. Add more milk if necessary for thinning consistency of glaze.
