Strawberry Cheesecake

Every restaurant, pastry chef and Grandma claims to have the best strawberry cheesecake. Junior's Cheesecake, Lindy's, and The Cheesecake Factory all make outrageous cheesecakes and you can order them online and get a gourmet cheesecake delivery. Why not make your own? Making the Perfect Gourmet Cheesecake:

The most common complaints about making cheesecakes is that they're hard to make and tend to crack. Here are some suggestions to help make the perfect cheesecake.

NY Style Strawberry Cheesecake Recipe

Graham Cracker Crust:

Cheesecake Filling:

Directions:

  1. Preheat oven to 350 degrees F. Place pan of hot water in bottom of oven.
  2. Prepare 9 inch springform pan with foil and spray as directed above.
  3. Grind graham crackers in a food processor or crush very fine with a rolling pin.
  4. Mix crust ingredients and pat only on the bottom of prepared pan.
  5. In a mixing bowl on medium speed, beat cream cheese until smooth ~ about 3 minutes. Scrape down sides.
  6. Add sugar and cornstarch and beat again, scraping a few times. The mixture should be smooth.
  7. Add vanilla, eggs and egg whites 2 at a time. Beat until creamy.
  8. Slowly add the cream and beat only enough so there are no lumps and the filling is nice and fluffy. Scrape as needed.
  9. Pour batter into prepared pan and bake at 350 degrees for 60-70 minutes.

Can you use this in the recipe, instead of regular full fat cream cheese? Would there be any problems in substituting?

Yes, you can substitute neufchatel in this recipe. I've used it before with good results. The texture is a little different, but you probably won't even notice.

I dont have springfoil pan but would love to try this recipe for easter. Can I use a regular 9" pie pan? Any suggestions?

Yes, you could. However, a springform pan is almost twice the depth of a pie pan, so you would probably get two out of it. Reduce the baking time as well. It will be done when it starts to puff up just a little. Take it out of the oven at that time as it will continue baking for a few minutes longer. Decorate with strawberries as you would with the original recipe.
